Heat oil in a large skillet (non-stick preferred) over medium high heat. Add ground beef, all purpose seasoning, chili powder, cumin, oregano, red pepper flakes, and salt and pepper and cook until beef is no longer pink and cooked through. Transfer cooked meat to a plate and drain off any excess grease.

Add cubed velveeta, tomatoes, diced green chiles, and salsa verde to the skillet. Heat  over medium heat stirring constantly until velveeta is melted and combined with other ingredients. Add Monterey Jack cheese, stirring until melted and combined.

Return ground beef to skillet and stir to combine. Top queso with chopped cilantro.

Serve immediately.

Recipe tips

This queso is best served right away, however you can make it then store it covered in the refrigerator until needed. Heat it up in a microwave safe bowl when ready to serve, or warm up the crock pot for a couple hours. Start on high, then turn the heat to low to keep the cheese from burning.

You can also make this in the crock pot or slow cooker. Cook the ground beef first, then add all ingredients to the crock pot. Cook on high until cheese is melted then turn to low and keep warm.

This recipe easily doubles for larger parties and gatherings.

Monterey Jack cheese melts the best, so it's great for this recipe. Feel free to use pepper Jack cheese, Colby, or your favorite melting cheese.

Try ground turkey in place of ground beef.

Replace all purpose seasoning with taco seasoning for a nice smokey flavor.

Omit the meat for a vegetarian version.
